From the kitchen of John & Rhea Williams

½ – Cup peas (red kidney beans)

1 – Cup white rice

2 – Tbsp A-1 sauce

1 – Whole onion diced

4 – Slices bacon

Tabasco Sauce to taste

Salt to taste

 

Cook bacon (not too crisp) and reserve.

Cook peas in water covered with 2 inches of water.  Add salt, Tabasco and A-1 sauce and cooked bacon.   Add more water if necessary and add uncooked rice and simmer for 30 minutes or until rice is done.
