Ingredients:
– 1/2 cup coconut flour
– 1/2 tsp sea salt
– 1/2 tsp baking soda
– 6 eggs
– 1/4 cup raw honey
– 3 bananas (ripe…or extra ripe)
– 1/3 cup coconut oil
– 1 teaspoon vanilla extract
– 1 cup walnut or pecan pieces

Directions:
1. Preheat oven to 350 degrees F.
2. In a small bowl, combine coconut flour, salt and baking soda.
3. In a blender (or with a fork), puree the 3 bananas
4. In a large bowl mix the eggs, honey, bananas, coconut oil and vanilla until well blended. Mix dry ingredients into the wet, blending with a hand mixer or by hand. Gently fold in walnut (or pecan) pieces.
4. Place batter in non-stick muffin tins OR oil small individual glass bowls and pour batter in about 1/2 – 3/4 full.
5. Bake in preheated oven for 15-25 minutes (depending on what size muffins you are baking)
