From the kitchen of Emma Avina:

1 ½ – Cup premium long grain rice

4 – Cloves crushed garlic

2 – Tbsp. olive oil

1 – Cup chopped onion

1 – Cup chopped cilantro

1 ½ – Cups chopped tomato

3 – Chicken thighs boiled and shredded (boil 20 – 25 minutes)

 

Begin boiling chicken,

 

Prepare garlic, onion, cilantro and tomato.

 

Cook rice until brown, and then add onion and garlic.  Add tomatoes and cilantro.

 

Shred and add chicken.  Add chicken broth as necessary and cover.  Add salt to taste and simmer 15 – 20 minutes.
