2 – Cups flour

2 – tsp. Baking powder

1 ½ – tsp. Baking soda

1 – tsp. Salt

2 – tsp. Cinnamon

2 – Cups sugar

1 ½ – Cups salad oil

2 – Eggs

2 – Cups shredded carrots

8 ½ oz. – Crushed pineapple

½ – cup chopped nuts


Sift together flour, baking powder, add, salt and cinnamon.  Add sugar, oil, eggs.  Mix well with mixer.  Add carrots, drained pineapple and nuts.  (Do not drain pineapple completely).


Bake at 350 degrees for 35- 40 minutes or until done.


Cream Cheese Frosting


Cream ½ cup butter or margarine, 8 oz. creamed cheese and 1 tsp. vanilla.  Beat in 1 lb sifted confectioner’s sugar.  If too thick add milk until spreading consistency.  If desired add coconut.
